How nice to send in your mouth a piece of crumbly and fragrant bun or cake, cooked with your own hands, and even washed down with fragrant tea. Today we will try to make a very tasty and interesting dessert - poppy seed roll - a treat that children and many adults love very much.
Initially, the pastry roll is considered a German or Austrian variety of cake, however, it is with the poppy variety that one amusing story is connected. It is believed that it was invented in France during the Christmas holidays: it became an excellent substitute for the traditional log, which was poured with wine, and then brought into the house and set on fire.
It was believed that the ashes from this log are a kind of guard against all misfortunes and evil spirits. Naturally, over time, this tradition has almost completely disappeared, poppy seed roll has become a tasty substitute for ordinary logs.
How to cook a delicious poppy seed? There are many varieties and recipes for this delicacy, often poppy mixed with something else, such as raisins, cherries or other berries.
Dough can also be used in a variety of ways: someone prefers a yeast, and someone puffs, here already, so to speak, the matter of personal preferences. But only one rule remains unchanged: the filling in such a treat should be many, sometimes even more than the test itself - only so it will turn out really delicious.
What do we need?
First, let's deal with the dough: 150 ml of milk, egg, dry yeast, sugar, salt, 50 g butter (you can substitute margarine), a bag of vanilla sugar, vegetable oil, and about 3 cups of flour (maybe a little more). For coating the dough, we still need half an egg and a spoon of butter.
Next, the filling: the main ingredient is about one and a half glasses of poppy, sugar, one egg and a little raisins to taste.
For powder: a little flour (3-4 spoons), 0.5 tablespoon of butter, sugar and half an egg.
How to cook?
Milk needs a little warm to make it a little warm.We pour it into a large bowl, there also add a teaspoon (you can even with a slide) of dry yeast, half a tablespoon of sugar and about three tablespoons of flour.
Next, mix well, with the result that you should get quite a liquid mixture, reminiscent of dough for pancakes. Close the bowl with cling film and place in another large container with warm water for half an hour. During this time, as the water cools down, it must be changed to a warmer one so that the dough rises well.
In another container, we begin to knead the baking: for this, melted butter (about 50 g) is slightly heated, add an egg, a bag of vanilla sugar, three spoons of sugar, a pinch of salt and a couple of spoons of vegetable oil.
Mix well, it is important that the sugar is completely dissolved. For the filling raisins we sort out (we release from the tails), fill it with boiling water and let it stand. In a separate container bring to a boil a couple of glasses of water and pour the poppy into it, mix it, put it on the fire and wait for it to boil. Now it can be removed and filtered through a sieve or cheesecloth.
In order for the filling to turn out to be very delicate, it can be passed through a meat grinder or grinded in a coffee grinder.If none of the options is suitable, one more thing remains - to rub a wooden pestle. In poppy add four spoons of sugar, egg and bring in a state of homogeneous gruel. If the mixture turned out too liquid, then it can be filtered again.
At this time, the opara already approached: mix it with prepared egg baking. Sift 2.5 cups of flour into it, mix everything well. The result should be a sticky and sticky dough, which we spread on the table, sprinkled with flour. We continue to knead it with your hands until it stops sticking.
We take a bowl, grease it with vegetable oil and shift the ball of dough into it. We close it with cling film and send it to a warm place for an hour. At this time we are engaged in a sweet crumb for dusting: we put all the ingredients in a common pot, mix it, and then rub it with our hands until it forms a crumb. Send it to the fridge and go back to the test.
It had to rise twice: we crush it, cover it and again into heat. At the end of the hour, it should again increase several times: we flush the table with flour, spread the dough and roll it into a rectangle.
We begin to form a roll: we grease the layer with butter on top, spread a decent layer of poppy seeds, raisins, the edges of the dough should remain free (about 3 cm). We turn the edges inward and begin to spin the roll. Prepare a baking sheet: we cover with parchment, smear with butter a little and carefully transfer the roll onto it, let it stand for another 15 minutes.
We grease him with an egg from above, take out the crumb and sprinkle it with rolls. Bake for about 40 minutes at 180 °. If the middle is badly baked, then it can be pierced several times with a toothpick, then covered with a foil and brought to the desired state. Done!
